If you'd drink wine with a certain dish, you can cook that dish with a bit of wine in it. The sugars, acids and tannins left behind after the alcohol evaporates will take your favorite recipes to a whole new level. Wine can be used as an ingredient in a marinade and as a cooking liquid.

Types of Dishes that Are Perfect for Wine

Since the alcohol content in wine evaporates over time, leaving behind the flavor of the wine, you should use wine in dishes that have to cook or simmer for a while. If you put wine in too late in the cooking process, it could end up tasting too sharp. Recipes containing lemon juice or vinegar are perfect since you can substitute these ingredients for wine. You can add wine to virtually any sauce, soup or gravy. It also makes a wonderful marinade for fish. 

How to Choose the Right Wine

Most experts warn budding chefs to stay away from cooking wines since they often contain too much salt and too many additives. Stick to traditional drinking wine instead. Select a decent wine of good quality. In most cases, you will want to select a dry or medium-dry wine, as they have less sugar. If you're cooking a sweet dish, however, you may want to use a fruity, sweet wine. 

How Much Wine to Use

The flavor of wine can quickly overwhelm a dish, crowding out the other flavors. For this reason, you should add wine slowly and check the flavor often. Keep in mind that it can take several minutes for the full effect of the wine to become apparent. Be patient. Generally speaking, you should add 1/4 cup of wine to 1 pound of meat and 1 to 2 tablespoons of wine per cut pf soups, sauces and gravies. 

How to Store Wine

The wine you cook with can be placed in the refrigerator and used for up to 2 weeks after you open it. Be sure to keep the cork firmly in place.
